This cookbook has many excellent recipes featuring 10 super foods that we should all be eating on a regular basis. The author does use sugar, canola oil and wheat floor in his recipes, but those items can easily be substituted with gluten free flours, coconut oil and xylitol. A lot of the recipes use primarily vegetables. Most of the recipes are very low in simple carbs if there are any at all. The author uses lower lactose goat cheese in recipes that call for cheese. There are tofu recipes. Recipes include items that are found in most household pantries and refrigerators! Here are a few recipes examples: Zucchini-Layered Salmon with Stewed Eggplant, Quinoa-Stuffed Red Peppers, and Beet and Zucchini "Lasagne". This cookbook is worth the purchase.
